INGREDIENTI PER 6 PERSONE
1 Kg. e 200 di agnello a pezzi, 600 g. di semola, 200 g. di carote, 250 g. di patate, 100 g. di ceci, 150 g. di zucca, 100 g. di cipolla, 30 g. di aglio, 10 cl. di olio d’oliva, 120 g. di concentrato di pomodoro, 30 g. di paprika, un cucchiaino di zafferano, un cucchiaino di pepe nero, un cucchiaino di cannella, mezzo cucchiaino di chiodi di garofano.

PREPARAZIONE
Bagnare la semola con acqua tiepida, un cucchiaio di olio e un cucchiaio di sale. Lasciare riposare per 5 minuti ed “incocciarlo”. Soffriggere l’agnello con la cipolla per 5 minuti. Aggiungere concentrato di pomodoro, paprika e un litro d’acqua. Far bollire per 10 minuti e versare nel brodo i legumi. Versare la semola nella couscousiera e cuocere a vapore per 10 minuti (I fase di cottura). Dopo 20 minuti togliere il cous cous dal fuoco, versarlo in un piatto e amalgamare il tutto con 30 g. di burro.
