Miglior Cous Cous 2002

Cous cous con crostacei e peperoni profumati al basilico e mandorle

INGREDIENTI PER 10 PERSONE
1 kg. di semola di grano duro, un cucchiaio d’olio extravergine d’oliva, zafferano, acqua, una cipolla, 6 spicchi d’aglio, prezzemolo, limone, cannella, alloro, sale e pepe nero, 400 g. di parmigiano grattugiato.

INGREDIENTI PER LA ZUPPA
Pesce sampietro, scorfano, gallinella, 2 cipolle, 8 spicchi d’aglio, 2 o 3 foglie d’alloro, 8oo g. di doppio concentrato di pomodoro, 100 g. di mandorle, sale, peperoncino, 5 litri di acqua, olio extravergine d’oliva.

PREPARAZIONE
Incocciare la semola di grano duro con acqua, sale, aglio e zafferano. Aggiungere aglio, mandorle, cipolla e prezzemolo tritati, limoni tagliati a pezzetti. Mettere tutto nella couscousiera e far cuocere a vapore per circa 1 ora e 15 minuti circa. A parte preparare la zuppa di pesce facendo un soffritto con cipolla abbondante, qualche picchio d’aglio, peperoncino e 2 o 3 foglie d’alloro. Aggiungere il doppio concentrato e l’acqua. Portare ad ebollizione. Aggiungere il pesce. Cuocere per 1 ora e 30 minuti circa aggiungendo un trito di aglio e mandorle.
