Milior Cous Cous 2003

Cous Cous di noci e mandorle tostate

INGREDIENTI PER 10 PERSONE
1 Kg. di cous cous, 1,2 Kg. di carne di manzo, vitello o montone, 1 Kg. di cipolle, prezzemolo, coriandolo, uva passa, 300 g. di pesche, 300 g. di mele, 300 g. di pere, 300 g. di fragole o ciliegie, 300 g. di albicocche secche, 250 g. di prugne, 250 g. di mandorle, 250 g. di noci, 300 g. di burro, 2 dl. Di olio d’oliva, 500 g. di zucchero. Condimenti: sale, pepe, zenzero, zafferano, cannella in polvere e in stecche, acqua di fiori d’arancio.

PREPARAZIONE
Dopo aver lavorato il cous cous con l’aggiunta di poca acqua per impedire la formazione di grumi, si procede alla cottura a vapore per tre volte. Si aggiunge acqua fredda alla prima, acqua salata alla seconda e burro fuso alla terza. Cuocere la carne tagliata a pezzetti con un trito di cipolle, prezzemolo e coriandolo. Condire con sale, pepe, zafferano, cannella e burro. Una volta ridotto il sugo di cottura aggiungere lo zucchero.
