Cous cous d’estate

INGREDIENTI PER 8 PERSONE
800 g. di cous cous, 1 Kg. di coscia di agnello, 1 kg. di carote, 500 g. di zucchine, 800 g. di patate, 200 g. di ceci secchi, ½ litro di olio extravergine d’oliva, 200 g. di cipolla bianca, 150 g. di concentrato di pomodoro, sale, pepe nero, coriandolo tritato e carvi, chiodi di garofano, bottoni di rosa, 50 g. di harissa, peperoncini verdi (felfel) fritti.

PREPARAZIONE
Sistemate la semola in un piatto di terracotta (ksaa) insieme all’olio d’oliva e lasciatela riposare per 10 minuti. Lavorate l’impasto con le mani facendo attenzione a sciogliere i grumi che si formeranno. Bagnare con acqua tiepida e lasciare gonfiare per 20 minuti circa.

PREPARAZIONE DEL CONDIMENTO
Saltare le cipolle nell’olio insieme alla carne tagliata a pezzi e quando appassiscono aggiungere il concentrato di pomodoro e lasciate rosolare. Quando il tutto sarĂ  ben mescolato aggiungere l’acqua fredda (3/4 della pentola), aggiustare il sale e unire le spezie.
