 Miglior Cous Cous 2005

INGREDIENTI PER 8 PERSONE
2 Kg. di abbacchio (coscia o spalla), 1 Kg. di zucchine, 1 Kg. di rape bianche, 1 Kg. di carote, 2 cipolle, una scatola di ceci, una bottiglia di passato di pomodoro, olio d’oliva, sale, un cucchiaio di pepe nero, un cucchiaio di paprika dolce, ½ cucchiaio di paprika piccante, 2 Kg. di semola, 50 g. di burro.

PREPARAZIONE
Tagliare la carne a pezzi e metterli nella couscousièra, tritare la cipolla e aggiungerla alla carne con 1 bicchierino d’olio, sale, pepe e paprika (un cucchiaino da caffè). Mettere la pentola coperta sul fuoco e lasciare cuocere bene, mescolando di tanto in tanto per mezz’ora. Aggiungere il pomodoro ed 1 litro d’acqua calda, lasciare bollire per 20 minuti. Bagnare il cous cous con 2 bicchieri d’acqua, lasciare gonfiare per 10 minuti e metterlo nella couscousièra a cuocere. Quindi poggiarlo sulla pentola e far cuocere a vapore per 15 minuti. Aggiungere 1 cucchiaio di sale, 1 litro e mezzo d’acqua fredda e far gonfiare per 15 minuti su un grande piatto.
