Persico Africano in letto di Attiekè con polpettine semplici

INGREDIENTI PER 10 PERSONE
1 kg di pesce per brodo (misto), 1 kg di pomodori maturi, mezzo chilo di cipolle,1 kg filetto di persico africano, 10 mazzancolle, sedano, prezzemolo, un dado Maggi, carote, un peperoncino ivoriano, un dado di crostacei, olio di palma, 1 kg attiekè (non precotti), semola di manioca, 1 kg circa di melanzane, 250 g di peperoni assortiti, olio d’oliva, sale e pepe

PREPARAZIONE
Cuocere a fuoco lento il pesce per zuppa, con sedano a pezzetti, pomodori,carote e cipolle, dado Maggi. Una volta cotti, filtrare il brodo. Preparare la salsa piccante con un trito di sedano, carote e cipolle che si soffrigge con olio di palma e peperoncino ivoriano. Fare stringere aggiungendo poco a poco una parte del brodo di pesce. Preparare uno stufato di verdure con melanzane, peperoni, carote, cipolla, pomodori e prezzemolo. Cuocere l’attiekè, ovvero i granelli di semola di manioca (in alternativa semola di grano duro) con il rimanente brodo di pesce (nella pentola inferiore).
