 Miglior Cous Cous 1998

INGREDIENTI PER 5 PERSONE
500 g. di semola di grano duro, olio d’oliva, sale, peperoncino. 1 Kg. di pesce da brodo, 500 g. di patate, 500 g. di carote, 500 g. di zucchine, una cipolla, 4 spicchi d’aglio, 500 g. di concentrato di pomodoro, coriandolo e cumino.

PREPARAZIONE
Cuocere al semola a vapore, condita con olio, sale e pepe e bagnare con un po’ d’acqua, per 5 minuti, sul brodo di pesce precedentemente preparato. Togliere dal fuoco e dopo avere manipolato la semola per ridurla in piccoli granuli, riporla sul fuoco per altri 15 minuti.

PER LA ZUPPA Soffriggere in un tegame aglio, cipolla e peperoncino, aggiungere il concentrato di pomodoro, un po’ d’acqua e far cuocere per 30 minuti. Dopo aver tagliato i legumi a pezzi versarli nel tegame e lasciarli cuocere insieme al resto per 10 minuti. Infine unire il pesce e far cuocere per 5 minuti. Estrarre il pesce, i legumi e filtrare il brodo. Versare in una zuppiera il cous cous, parte del brodo filtrato, parte del pesce pulito e sminuzzato ed i legumi. Servire con il brodo ed il pesce rimasti.
